Stir Fried Scallops

1 onion, thinly sliced
2 small-medium broccoli
2 carrots tinly sliced
500g scallops (not enough will need a little more like 600-700g)
scallops marinated with a drizzle of sesame oil, oyster sauce, pepper.

Blanche the broccoli and carrots then leave aside, save the water for the sauce
In a wok, some oil, onion then stir fried the scallops until cooked, will take awhile, add some water from the blanching pot to thin out the sauce as scallops tend to thicken the sauce.
Pop the vegetables in to toss to mix.
Garnish with more pepper and some coriander.
