some oil...some chopped up garlic..shallots..or brown onion...then add some sweet soya..fish sauce..2 teaspoons of sugar..mix well ...float the fish in...cover..on very low heat...
after a few minutes once boiled...use a spoon to pour (rưới) sauce onto the top of the fish so it's all the same colour..:) keep on doing it so it's all even..:) and flavoured through..
I used fillets so there's hardly any bones..you can add pepper and chilli too...I just use pepper as kids cant have it spicy..:)
can also add fat cubes, need to buy the fat (pork) from butcher, cube it and then deep fry it before adding to the pot.
sweet soya= kecap manis =Indonesian it's what gives it the dark colour..
no need to làm nước màu ..got this hint from a friend he's a chef..ehehhe as nước màu sometimes when you leave too long it's bitter...
this way it comes out perfect every time
