Ingredients:
300g salmon fillet sliced
300g scallops
10 prawns (shelled)
5 baby octopus quartered
1 bunch asparagus sliced diagonally about 1/2 cm thick
1 carrot thinly sliced
1 handful of snow peas
1 zucchini sliced diagonally about 1/2cm thick
1 eggplant sliced diagonally about 1/2cm thick
1 red capsicum cut into strips1 can of coconut milk (400ml)
2 tablespoons of Mae Ploy Green Curry Paste
1 stalk of lemon grass
3 bay leaves
1 bunch of basil
1/2 bunch of coriander
sugar
fish sauce
How I did it..
Blanch vegetables except for capsicum
Into a hot wok.. pop the curry paste in with some coconut milk..then some bay leaves and lemon grass (xả) ..
then the seafood...once nearly cooked pop the vegetables in, some water, sugar and fish sauce to taste, basil leaves (húng quế ) and coriander (ngò) just before taking the wok off heat..
