Black Eye Beans, Sticky Rice, Coconut Milk Dessert

375g black eye beans (soaked overnight) 
200g glutinous rice
300g caster sugar
1Litre of water
500ml of boiling water (extra if required)

1 can (400ml) coconut extract
1 tablespoon of corn flour dissolved in cold water

Line pot in order from bottom up
Beans
Rice
Sugar
Water (1 Litre)

then simmer on stove covered until all the water disappeared, stirring occasionally, the beans should be nearly cooked.
Remove from heat and leave aside covered for 15 minutes.
Boil some water.
After 15 minutes check the pot to see if everything is cooked. If not pop back on stove and add in the boiling water a little at a time to the desired consistency for another 5 minutes.

Found the sticky rice needed the extra water as it was too gluggy.

Coconut milk 
Pop the milk in a small pot, bring to boil, then stir in the corn flour mixture to thicken the coconut extract.
