Fried Rice

2 rice bowls of uncooked rice (=2 and 2/3 cups) (cook them drier than normal, I tend to only cook it with 2/3 of the water I would normally)
8 chinese sausages, thinly sliced, pan fried then drain all the excess fat on a kitchen towel
8 eggs beaten
1/2 small bag of peas and corn, thawed with boiling water then drained on colander.
1 take away box of BBQ pork cut into little cubes (can be bought from a BBQ restaurant, can also be made from scratch with shoulder cut of pork and a bag of seasoning for BBQ pork from the Asian groceries, need to marinate overnight then grilled) 
1 brown onion
spring onion to garnish
pepper
sugar
fish sauce

Some oil in wok, sliced onion in to sautee then eggs to scramble ..take out wash wok.
Some oil then add the cooked rice after rice is warmed add the scrambled eggs, season with a drizzle of fish sauce, a little sugar.
Then add Chinese sausage, peas and corn, BBQ pork.
Garnish with spring onion, pepper

Fried rice traditionally is left over rice..then anything else chucked in to make another meal..can virtually add anything to it..for fancier fried rice just add some prawns.
