Cơm Tấm (Broken Rice)

Gạo tấm (broken rice)
trứng (fried egg)
chả trứng (cà rốt, hành củ, thịt heo bằm, miếng , mộc nhĩ)
omelette (carrot, onion, pork mince, bean vermicelli, dried fungus, drizzle of fish sauce)
bì (thính, bì, thịt ba rọi luộc) 
*(pan fried grounded rice, pig skin, boiled belly pork) 
*can be bought already made from Viet groceries but nicer to make from scratch..:)

Bì :
pan fried grounded rice =thính comes in small bags 2 bags should be sufficient (buy from VN butchers)
pig skin= bì comes in bags 1 bag should be sufficient (buy from VN butchers)
1/2kg-1kg belly pork boiled (with a brown onion) and then sliced thinly into strips
Combine the three ingredients, should be half bì and half meat, add some fish sauce for dipping to season the bì ..

sườn cốt lết nướng (pork chop grilled)
marinated with soy sauce, oyster sauce, sesame oil, spring onion, garlic, pepper, alternatively marinate with fish sauce, lemon grass leave overnight.
cà chua (tomato)
dưa leo (cucumber)
đồ chua (pickles)
nước mắm ngon (tỏi , chanh, đường, ớt, nước mắm)
fish sauce for dipping (garlic, lime, sugar, chilli, fish sauce)
hành lá phi (spring onion sautee in oil) 

cheated...bought the pickles from a BBQ restaurant.
rice need to be cooked extra dry

omelette:

1.5 brown onion chopped
11 free range eggs beaten
2 medium carrots shredded
30-50g bean vermicelli soaked and chopped
3-4 dried fungus soaked and chopped
400g minced pork
fish sauce to taste
oil for pan

Combine all the ingredients and pour it into an oiled pan. Cook on low heat and covered. Once nearly cooked flip it over.
